Golden and blonde

Given that we live in a country where people are dark haired, the concept of being "such a blonde" should actually be quite alien to us in a literal sense. However, given the figurative meaning behind it, lets just say we all have our blonde moments even without a shiny golden mane.

On an individual level, my epic blond moment was attained when I sat flipping through a magazine for about half an hour in a plush lobby waiting for my friend to finish her hair appointment. It was this salon I had never been to and had only heard "ooh" "aah" "wow" things about. My friend had gotten there early and I was to meet her there.
"Plush lobby for a salon", is what I thought as I entered.
I found a nice couch in the waiting area that I sunk into and took the nice heady pineapple juice mixture type thing a nice lady offered me.
"Oh so nice", is what I thought as I settled there.
But then as I waited drinking my juice and watching people emerge from the space behind an opaque glass like wall beyond the waiting area, which I obviously assumed to house the salon type chambers and chairs, I realized that something was a little off.
There were only couples around me waiting and only couples emerging from this snazzy opaque glass wall. After paying further attention it struck me that none of these couples seemed relaxed and rejuvenated from a haircut or a mani or pedi as they came into the lobby.
No unwanted hair-flips. No flashing of nails. No giggly smiles.
"This is weird"
So, I went to the nice kind lady behind a huge white desk at the reception and asked her if this was xyz salon.
"Salon? No ma'am. This is xyz Fertility Clinic"
This... is what I call a blonde moment.

In my defense I was quite young, 19 to be precise and the salon door was camouflaged by quite a bit of darkness while the entrance to this clinic was bright and I would like to dismiss this as a one off blonde moment and something that has in no way tarnished my very non-blonde IQ!

Mortifying then, amusing today.

Hence, in honor of this memory/story here are some fudgy "Blondies" from the Hummingbird Bakery. The recipe uses pecans but due to unavailability you can use almonds, as I did!


150g white chocolate, broken up
125g unsalted butter
150g caster sugar
2 eggs
1 1/2 tspn vanilla extract
200g plain flour
pinch of salt
120g pecan nuts, chopped

Preheat the oven to 170c. 
Put the chocolate and butter in a heatproof bowl over a saucepan of simmering water. Leave until they have melted together.
Remove from heat. Add the sugar and stir until well incorporated. Add the eggs and vanilla extract, stirring briskly. The mixture may look like it is starting to split but it will be fine. Add the flour, salt and pecan nuts and stir until well incorporated. 
Spoon the mixture into the baking tray and bake for 35-40 minutes, or until golden brown and the centre is still soft. Leave to cool completely.
